Creamy Cheesy Corn & Scallions Casserole made with a Beefer

I’m a big believer of using the freshest ingredients I can. Luckily for those of us in the States, fresh corn is a year round thing because our freight infrastructure is so good here, making this dish perfect for a warm summer night or a comforting side dish for Thanksgiving dinner, and everything in between.

Ingredients

  • 2 ears of corn, shucked
  • 1/2 tablespoon canola 
  • 1 teaspoon bacon smoked salt or seasoning salt 
  • 1 tablespoon butter 
  • 1/2 cup heavy cream or half and half
  • 1/3 cup cilantro, chopped, divided
  • 2 medium scallions, chopped, divided 
  • 1 cup shredded Mexican blend cheese, divided 
  • 1 medium lime, cut in half, divided

Instructions:

TIP 1 Two cups of frozen corn (thawed) can be used when fresh corn is not in season.

Preheat your Beefer to medium heat while...

using a sharp knife to remove corn from cob

Divide corn equally into 2 Beefer grill trays. Drizzle corn with canola oil, and stir with Beefer grill tongs:

STEP 3 Slide the first corn tray onto the 4th shelf, and slide the second corn tray onto the center shelf:

Grill for 30 seconds. Slide out grill tray, turn tray 180 degrees and slide back in, and grill for an additional 30 seconds. Stir corn with Beefer tongs, and continue to cook at 20 second intervals until corn is slightly charred. Repeat grilling steps with the second tray of corn:

STEP 4 Sprinkle charred corn with smoking salt, and stir with grill tongs:

Time for Roemertopf®

Transfer corn into a warm Beefer stone bowl, or keep corn in 2 grill trays. Top charred corn with butter, and stir in cream, 2 tablespoons chopped cilantro, and half of the scallions and cheese. Squeeze juice from 1/2 lime over the corn, and thoroughly mix. Top with remaining cheese:

Golden Brown in seconds...

TIP 2 Place Beefer stone bowl onto a Beefer drip tray before placing on the bottom of the Beefer grill to warm. The Beefer stone bowl retains heat well and is excellent as a serving dish. 

STEP 5 Slide the corn tray or bowl onto the center shelf, and bake for 30 seconds or until cheese has melted. Slide out grill tray, turn tray 180 degrees and grill for 20-30 seconds or until top is golden brown:

Add a little crumbled bacon for an added touch:
